The thing about commitment, is, when you’re really committed, it’s a lot of work. I mean, A LOT of work!

After a long Holiday stretch, way too
many dietary indiscretions, some health flare ups, skin break puts, and general disconnection with self I’m back to being committed to Paleo nutrition. Somehow, as my husband so aptly pointed out last night, I have a tendency to commit to things, to strive for consistency at just the wrong times. But alas, that is me, so here we go…

We’re heading North to VT with my sister-in-law and family. I sat with my brother-in-law earlier this week and mapped out our menu for 9 people.

After a double Fran at CrossFit this morning at 6am(what were they thinking…) I went and shopped for our list. I came home grateful for our 32 degree weather so I could just leave it all in the car. And finally a few hours later after working, packing, prepping, etc… I came back out, sorted it all, put what needed to be cooled in the coolers, what needed to be accessible immediately in certain spots, and then left it to my sweet love to figure out how to load in to the car in addition to all of our ski gear, car seats, and kiddos.

Now as we roll North, packed in tight, I feel like we’re going to rock this week nutritionally. I also feel exhausted.

So… What’s on the docket?

  • A big pork shoulder from the pig we recently bought(undecided on Kailua style or BBQ pulled pork)
  • An amazing chuck roast in adobo sauce
  • Lots of chicken soup
  • Italian Stew
  • Swedish Meatballs
  • Make your own pizza night
  • Red Chili Con Carne
  • Hannah’s White Chili

Lots of kale and cauliflower, other veggies, and sweet potatoes.

For the kiddos I also threw in a few boxes of gf blueberry waffles and Bell and Evans GF Chicken Nuggets. Some popcorn and Annie’s new Organic fruit snacks. Finally some gf pasta. They’re going to be skiing their tushes off and I want them to fill up at every meal.

Treats? Yep, plantain chips, dark chocolate and fixings for bacon chocolate chip cookies from The Food Lovers.

Ok, I’m ready to eat, but first…. We drive…
